Tasting Notes For Novicium Continuum 2018 

The 2018 Continuum Novicium is sourced from the Sage Mountain Vineyard—an estate vineyard high on Pritchard Hill in Napa Valley, California. The vineyard is estate-grown, and this vintage (2018) is a pretty focused expression of Cabernet Sauvignon, with 90% Cabernet Sauvignon, 7% Petit Verdot, and 3% Cabernet Franc.

On the nose, the wine delivers dark, concentrated fruit—black cherry, blueberry, and plum—alongside hints of cassis, graphite, and an undercurrent of savory herbs, pepper, and even tapenade and star anise. On the palate it shows medium-plus acidity, fine-grain/densely packed tannins, and a sinewy structure: elegant, with good mineral and herbal facets and some oak influence but not overwhelming. As for food pairings, this wine would stand up beautifully to rich, savory dishes—think rosemary crusted lamb, grilled or roasted steaks, game meats, mushroom risotto, or aged cheeses.

The 2018 Novicium boasts expressive grace notes of sage and bay leaf atop deep bass layers of dark chocolate and mixed cherries. Medium to full-bodied, it's nicely velvety in texture, with ample length on the finish. It's not your ordinary "second wine, " but it's not coming from an ordinary estate either.
